I usually scp the db locally, explore it in a browser SQLite viewer ( inloop.github.io/sqlite-viewer/ ), then run any changes via a migration/script on update. Not as convenient as MySQL for ad-hoc edits, but it’s simpler to set up. Plus that keeps changes versioned in code, which is good, I guess.

Yes. Yes. Yes, but the effort is proportional to the application's use-case. Sometimes it can be as simple as switching from incrementing IDs to UUIDs to protect private information on a public resource (eg an invoice may be on a public link, but it shouldn't be possible to brute-force the URL).

VPNs work against MitM attacks, but it isn't the only place a MitM can happen. If you can gain access to one point on the network, you may be able to extend trust to other networks. Then you simply skip the VPN network and direct traffic to your server.

If any software on the PMS system or the central repository has internet facing software (eg reporting totals to corporate), then that becomes an attack vector potentially allowing remote access to the network. As for the software being undocumented, security through obscurity is no security at all.

This is where an issue can exist—let’s say I’m adversarial and act as a MitM between the PMS software and the central repository. I can spoof responses to claim I booked and paid for room X. To prevent this, the PMS must cryptographically verify responses as authentic and untampered. Is this done?
