This might be Hamburg’s next Michelin star ⭐️ Dining here was out of sheer luck (waitlisted for ages but someone cancelled last minute). It has a low capacity yet very in demand, sells out within 1min every time reservations open. It’s also fully booked ‘til April, so only luck decides who gets in 😆
They offer a pescetarian 10-course menu (with wine pairing) and with available vegetarian options The cuisine is rooted in the region, inspired by the world, following the rhythm of the year and the cycle of the seasons. During the growing months, the kitchen works intensively with nature’s changing supply, preserving as much as possible for the colder times. They serve the taste of Hamburg’s nature all year round. They constantly expand their base of ingredients and techniques, in the storeroom as much as in the kitchen.
