Today's thing, went down an AI resource consumption rabbit hole. "20 to 50 queries consume roughly 500mls of freshwater for cooling alone; at global scale, AI-attributable water withdrawal may approach 6.6 billion m³ annually by 2027." That's equivalent to over half the UK's total water usage. Wow
A screen grab of an abstract from "The Hidden Cost of Artificial Intelligence: AI's Resource Consumption" with a section of text highlighted. This reads: "Verified institutional data shows AI data centers consumed approximately 415 terawatt-hours of electricity in 2024, a figure the International Energy Agency projects will reach 945 TWh by 2030. Inference costs compound: billions of daily queries accumulate continuously, and their aggregate energy burden eclipses the one-time training cost for any widely deployed model. Water consumption is similarly underweighted. Twenty to fifty queries consume roughly 500 milliliters of freshwater for cooling alone; at global scale, AI-attributable water withdrawal may approach 6.6 billion cubic meters annually by 2027. Hardware supply chains draw on cobalt, lithium, copper, and rare earth elements under conditions of projected mineral scarcity, and annual AIattributable electronic waste could reach 2.5 million tonnes per year by 2030 without intervention."

Swung by @pettigrewbakes.bsky.social's Breadquarters on the way back from today's vet trip. M NotLeafy forgot to take photos of the buzzing café but he didn't forget to bag a superb mango lassi Danish & pistachio croissant. Wonder if they've vacancies for tasters in their development kitchen?😋😋
A mango lassi Danish pastry sits on a brown speckled blue plate. The bronzed outer pastry is almost round, the topping pale (less yellow than in the pic) with mango gel in the centre. The left hand side has crumb atop. The mango lassi flavour was unmistakable, a touch of cardamom detected.A large filled croissant sits on a brown speckled blue plate. The browned surface shows off the pastry's lamination. To the top, its split spilling a luscious creamy and gooey pistachio filling, with some nuts too.

Well, that was special. Ryuchi Uneno kitchen takeover at Matsudai Ramen. Began with an umeshu sour cocktail & noodle senbei, sea lettuce furikake & curry mayo. Next up, veggie miso ramen. Deeply rich broth & atsuage tofu. Lovely catching up with @kavey.bsky.social & @ahnlak.bsky.social.

Making the most of time to stand and stare, gravitated to the Loire again. Strolled past quinoa fields on the way.
A view of the Loire from a sandy bank looking out towards a small similarly sandy island with some scrubby greenery on it too. The far bank is lined with mature trees in full leaf. A leafy tree leans in from the left foreground. The pale blue sky and fluffy clouds are reflected in the water.A view of a field of quinoa. In the centre foreground, a tall stalk laden with rust-red seeds. Surrounding it and into the background as far as can be seen, a haze of rust-red amongst green and paler dry foliage.

Decisions made, knew we were going to need a bigger box. Checked opening hours, anticipating one patisserie visit per trip isn't ever enough.
Back from the patisserie. A brightly patterned cardboard box held closed with thin black ribbon tied parcel-style.Inside the brightly coloured cardboard box. The lid is open and pulled out of view, revealing a white interior and eight cakes. From the front left: two Concorde (chocolate mousse meringue, covered in chocolate flakes - some of which escaped to the box in the journey home and were returned), one Tartelette citron vert basilic (round fine pastry case filled with lime basil cream, topped with a lime slice and icing sugar dusting). Row behind: One Guérandais (deep chocolate mousse, a heart of caramel beurre salé, chocolate covered), one 2004 (dark chocolate, croustillant, spices), one Choux cacahuite (choux pastry, peanut butter, peanut cream, chocolate top with caramelised peanuts. Back row: one Guérandais and one Tartelette as before.

Our favourite patisserie. Decision time.
A counter in a French boulangerie patisserie. It's glass-fronted above a low carved wooden frontage. On the deep lower shelf: rows of decorated cakes - some colourful in reds, yellows, violet and pink, others in shades of chocolate. On the narrower shelf above: small quiches, breads, brownies, financiers and similar cakes - including local specialty, Nougat de Tours. On the narrow top shelf: bags of almond biscuits and a basket of small baguettes. Behind the counter, a young white woman looks down as she packs a cake box.

Another stroll, a spot further along the Loire. Sat watching the world go by & a family cycle up. Chatting in French, the woman asked where we're from. Later, her older child came for his bike, paused facing away &, nerve gained, turned quickly to wish us a good trip in English. Thanked him so much💚
A view from a bank of the river Loire looking towards the other side. The sky is pale blue and studded with fluffy clouds. In the foreground, brown dried earth and scant grass. To the right, a bench with a cycle propped up at either end. In front, the blue water is shallow and sandy bars are visible. On the far side, trees in full leaf and pale stone buildings of a village.

What our trips are made for. A serendipitous stroll alongside the enchanting Loire and a river view picnic with bread still warm from the boulangerie, cheese and surprisingly good alcohol-free rosé fizz.
A view of the Loire from a bankside road. The roadway's pale and sandy, white bollards joined with a black chain line the bank for a few metres and the bank, with some green vegetation, leads down to the river. The water's reflecting the blue sky. Trees in full leaf line the distant opposite bank and this one further down the road. A small island in the river can be seen almost centre of the photo.A blue, gold and floral melamine plate with slices of bread and cheese sits on a pale concrete picnic table. To the right, an acrylic glass part filled with rosé fizz. Beyond, a wide dry verge that's browned, rather than green. There are also some trees in full leaf and, to the right, a glimpse of the blue river.

Again, again. Where else would we head when we're in France? One favourite stallholder was away, so tarte vigneronne wasn't in the haul, but there was plenty on offer despite the dry season.
A view of an outdoor market in Indre et Loire, France. It's a blue skied sunny day, the public square is closed to traffic and stalls have been set up. To the left in front of a leafy tree, fruit and veg stalls with boxes of melons, apricots and nectarines, as advertised on an A frame blackboard. To the right, a stone built covered part of the market. There are trees in the background, including a pencil cypress. The market's beginning to be busy with buyers perusing.A view of the covered market's interior with a long veg stall in the foreground. It's constructed of a series of trestle tables and is laden with (left to right) carrots, potatoes, garlic, radishes, celery, carrots, two kinds of green beans, radishes, white and purple aubergines, red and yellow peppers, courgettes and fennel. In the background also under cover, organic bread and honey stalls. Behind the covered market, stalls selling clothes and people selling baskets.A stall in the outdoor market is covered by a large orange parasol and is laden with punnets of three different types of strawberry and some raspberries. A banner across the front has details of the producer, who is selling there direct. We're waiting patiently in a queue behind two other buyers who are choosing their fruits and have already settled on mara de bois.
