Skillet Ginger Chicken With Apricots dried apricots are harder to find than apricot preserves, which work. according to the Internet Archive, this recipe is not very popular, and most comments are about adding spice - if your ginger is fresh, that should be enough! next time I'll serve it over orzo

Skillet Ginger Chicken With Apricots

INGREDIENTS

1 tablespoon plus 1 teaspoon grated or minced (unpeeled) fresh ginger

1 teaspoon ground cumin

1 teaspoon ground coriander

Kosher salt

1½ pounds boneless, skinless chicken thighs, cut into 2-inch pieces

2 tablespoons olive oil

1 small red onion, halved and thinly sliced

1 cup dried apricots, halved

3/4 cup white wine

2 to 3 packed cups baby spinach

2 packed tablespoons fresh mint or cilantro leaves

PREPARATION

STEP 1 In a medium bowl, combine 1 tablespoon of ginger with the cumin, coriander and 1 teaspoon salt. Pat the chicken dry, then add to the bowl and toss to coat with the mixture.

STEP 2 Heat the oil in a 12-inch skillet over medium-high until shimmering. Add the onion, season with salt, and cook, stirring occasionally, until just softened in texture and color, 3 to 4 minutes. Push the onion slices to the sides of the skillet, then add the chicken so that each piece has contact with the pan. (It's OK if it's crowded.) Cook, undisturbed, until the bottom is browned and releases easily from the skillet, 7 to 8 minutes more. Use tongs to flip the chicken and scatter the apricots around the skillet.

STEP 3 Cook until the other side of the chicken is no longer pink, about 2 minutes. Pour in the wine and remaining teaspoon of ginger. Use a spatula or wooden spoon to stir and scrape up anything on the bottom of the pan. Continue to stir to coat everything in the liquid until it's mostly absorbed with a little pooling at the bottom, the chicken is cooked through and the apricots softened, about 3 minutes more.

STEP 4 Add the spinach, mixing until wilted, about 2 minutes more. Season to taste with salt. Sprinkle with mint and serve.

Cauliflower Salad Sandwiches

INGREDIENTS

1 large head cauliflower (about 2 pounds), cored, halved and cut into 1-inch slices

6 tablespoons neutral oil

5 teaspoons curry powder

Kosher salt and freshly ground black pepper

4 ounces raw walnuts, roughly chopped

1 tart, crisp apple, cored and chopped into 2-inch pieces

1 lemon, zested and juiced, plus more to taste

½ cup mayonnaise

½ cup strained yogurt

½ cup raisins

½ cup cilantro leaves and tender stems, roughly chopped

1/2 cup parsley leaves, roughly chopped

4 hoagie rolls, split lengthwise

PREPARATION

STEP 1 Place a large, rimmed baking sheet on the middle rack of the oven and heat the oven to 450 degrees.

STEP 2 In a large bowl, toss the cauliflower with 3 tablespoons of oil, 2 teaspoons curry powder and a large pinch of salt. Massage the cauliflower to separate it into individual florets and coat it evenly in oil. Carefully spread onto the hot baking sheet and roast until cooked through and charred in spots, about 20 minutes. Turn the broiler on high and cook until cauliflower is deep brown and charred, 3 to 5 minutes.

STEP 3 While the cauliflower roasts, toast the walnuts: In a small skillet over medium heat, add the remaining 3 tablespoons oil, the walnuts and a pinch of salt, and cook, frequently stirring, until lightly toasted, 3 to 4 minutes. Stir in the remaining 3 teaspoons curry powder, turn off the heat and cook until fragrant, about 1 minute.

STEP 4 In a large bowl, stir together the apple, lemon zest and juice, and a large pinch of salt. Add the mayonnaise, yogurt, raisins, cilantro, parsley and the walnut mixture, taking care to scrape in all of the oil and curry, and stir to combine.

STEP 5 Add the cauliflower and toss until well combined; season with salt to taste. (The cauliflower salad will keep in the fridge for up to 3 days.)

STEP 6 Divide the cauliflower salad among the rolls and press firmly to close.
