It compares spinach to sirloin steak, noting that while spinach has more iron (2.6mg vs 2.5mg per 100g), only 1.7% is absorbed compared to 20% from steak. Low absorption is attributed to polyphenols. It highlights spinach as a source of beta-carotene and explains that "spinach teeth" are caused by oxalic acid reacting with calcium to form insoluble calcium oxalate crystals.

30 years ago today, December 31st 1995, the last ever Calvin & Hobbes comic strip was published. Even now, I still find it so poignant & moving.

While 𝘝. 𝘷𝘦𝘳𝘮𝘪𝘧𝘰𝘳𝘮𝘪𝘴 max temp is around 45°C, we found 𝘐. 𝘤𝘢𝘴𝘤𝘢𝘥𝘦𝘯𝘴𝘪𝘴 grows up to 63°C with optimal growth at 55-57°C🥵. We showed cellular replication via Ultrastructure Expansion Microscopy at 63°C. The previous limit for euks is 60°C!
