I made Potatoes Boulangère to go with some Steak, parsnip and carrot mash and roasted shallots my father in law got at a farm shop. First time cooking something wildly outside my skill set in a while, and I'm feeling pretty good about it.

A half eaten bowl of Potatoes Boulangère. Thin slices of potatoes, herbs all cooked in reducing chicken stock have left everything looking deep and brown and delicious, though annoying to clean up.

There isn’t a moral component to cooking, but there is a moral component to relying on a workforce of incredibly underpaid independent contractors to deliver your food while screwing over the restaurants that produced it, a thing that was not possible to do 10 years ago in nearly the same way.

Got a friend's potluck tomorrow, and this is the first time in a while I've cooked for a vegan crowd. Made some adjustments for Dishoom's House Black Daal, and it's worked an absolute treat.

Daal on the boil. It's right at the start of a 3 hour journey, so it looks like a spiced lentil soup.
