The noodle fairy brought me this
A fortuitously free item arrived today. It’s a delightful little cardboard box in the shape of a traditional US Chinese takeaway food container. Inside, a set of brightly coloured cards with (front and back) a picture of the type of one of 45 guides for noodles being cooked e.g. Cantonese Chow Mein and the recipe.… Read More »

After the pleasantries, you know, "Nigel, how are you? Good, wives and kids? Good, good. Any plans for a winter break? Right, yes, that'll be nice that time of the year", he was then "interviewed" for what remained of "half an hour"... That'll show him, eh?

Not great. I’m no surprised they’re trying to regulate the flow of information but wonder how much more worrying this is for people close by, when their usual news channels are giving them no details. Mind, I do wonder how much more we’d hear if something happened like this at say Porton Down.

This particular recipe for “Steamed Savoury Pork Belly with Preserved Vegetables” came from the pages of “Chop Suey, USA”, a scholarly work from Yong Chen. It’s a Hakka dish. Add more salt. No, more than that. More. MORE.
I’ve also heard that the professional cook will bemoan how poorly, how stingily, how infrequently, the home cook seasons their food whilst cooking (scared no doubt of pushing their sodium levels to dangerous, blood pressure threatening heights.) In general, they’re not wrong. But you know one thing that would help? This rather lovely idea that… Read More »

Just saw this menu for food served at a dinner party that Julius Caesar presented to the college of high priests in honor of the appointment of Lentulus Flamen Martialis around 70 BCE. Pretty sure it’s one I saw in Shoreditch recently. Very current.
For hors-d’oeuvres sea urchins, as many raw oysters as they wanted, palourdes, mussels, thrushes under a thatch of asparagus, a fattened chicken, a patina of oysters and palourdes, black piddocks, white piddocks; then more mussels, clams, sea anemones, blackcaps, loin of roe deer and wild boar, fowls forcefed on wheatmeal, Murex trunculus and Murex brandaris. The dinner was udder, the split head of wild boar, patina of fish, patina of udder, ducks, roast teal, hares, roast fowl, frumenty and Picentine loaves.

I'm really done with shaming people who use cooking shortcuts. There are so many reasons why we do - from illness to time to availability to "I just don't want to'. Don't apologize to me and say you're being "lazy" for making fries.
