650g bread flour, 175g water , 245g milk, 7g quick yeast, 1/4th cup softened butter, 9g sea salt, 25g sugar, 1 egg. Bloom yeast (water, sugar) 10m. Add butter, egg yolk, salt, flour. mix. 1h proof in greased bowl. Braid and proof 45m. Egg white wash + toppings. Bake @375 for 22-28m on parchment

It’s hella soft!

More details:
- water and milk at 86 degrees.
- fold the flour slowly into the other ingredients ensuring they all get mixed. I used the stand mixer for about 5 minutes then hand worked the dough another 5.
- grease the bowl for the first proof with more butter, and flip the dough around on it once to coat all sides
- 1 hour first proof, then pour it out into a lightly floured surface and cut into three equal pieces (approximately) and roll each into about 20” long ropes
- braid them together and pinch the ends together and tuck under to protect them
- transfer to a baking sheet with parchment paper or a greased baking sheet
- proof another 45m and pre-heat the oven 30m prior to baking.
- coat with egg white wash and the top generously with seasoning - everything bagel seasoning is what’s used here
- bake at 375 for 22-28m until golden brown.
- CAREFULLY transfer to wire rack. It will separate on the pleated sections if not careful.
- let cool at least 30m
