I add some chopped cilantro when I dish out some, the original video also put that in up front but I think the cilantro gets weird and muted then 100

Good, this is the wee beasties making lactic acid and farting out CO2 Taste it occasionally with a *clean* spoon. When you like the taste, take the cabbage out and put it in the fridge. Thomas Kula @kula.tproa.net · 1hYou can get fancy gas-burping jar lids, I didn't have any [1] so I just remembered to open the jar a couple times a day. You can also get glass weights to keep stuff submerged [2] but cabbage or silicone baking paper works fine. [1] I'm on a fermentation kick so I have some now. [2] Ditto. 100
Thomas Kula @kula.tproa.net · 1hPack it down well, the salt is going to draw out liquid and make a brine. Put a piece of cabbage on top. This helps keep things submerged, and also apparently cabbage is a good host for the wee beasties that do lactofermentation. Put a lid on top. Sit it on the counter and wait. 100
Thomas Kula @kula.tproa.net · 1hChop up tomatoes, peppers, onions, thinly slice up some garlic cloves. I used poblano peppers de-seeded and -ribbed, and roma tomatoes. Next time I'd probably slice the tomatoes in half and let out some of the gel and seeds, maybe. Add 3% salt by weight, mix well. Put in a clean jar. 100
