While both nori & wakame are edible seaweed, they are separated by >1 billion (!) years of evolution. Nori is red algae, which acquired its chloroplasts via primary endosymbiosis; wakame is brown algae, which acquired its chloroplasts from another algae. They are about divergent as human vs yeast.

The technique and white beans part are taken from the vegan holiday book by @isachandra.bsky.social pepperoni recipe. but I do my own spice blend, usually divide the recipe and do a couple different flavors

FOR THE PEPPERONIS:

1½ cup cooked or canned pinto beans, rinsed and drained
1 cup vegetable broth, purchased or homemade (page 203)
1 tablespoon olive oil
1 tablespoon tomato paste
2 tablespoons tamari or soy sauce
1½ cups vital wheat gluten
1½ cup nutritional yeast flakes
1 teaspoon granulated garlic
1½ teaspoons anise seeds, crushed
1½ teaspoon crushed red pepper flakes
1 tablespoon smoked paprika
Lots of freshly ground black pepper

The fam likes it when I use 3/4 c of white beans lightly mashed into the recipe, which gives it a softer/least dry texture and also visually mimics the white pockets of fat in meat sausage

It looks like a boil method which is not the way I do it, I like my seitan chewier and am reluctant to use that much broth every time. I bake mine in aluminum foil which lets me shape it like a log and cut slices off, great for sandwiches
