Partner update: their best guess right now is atypical chicken pox (having stumped two doctors and then bringing in infectious disease experts). Considering I had it as a child and have a surgical consult in a week and a half, this is basically the best possible scenario

While I don't know the accuracy of the measurements, using the CPAP machine my apnea events were down to a third of what was measured in the sleep study for night one, and half of that again on night two!
