Culinary experiment of the day: salted egg yolk. As advertised, makes a good alternative to parmesan when grated over pasta. Seems less salty than cheese which is amusing considering how much salt went into the process. Half a yolk is enough for one bowl.

I read @youngvulgarian.marieleconte.com ‘s Prospect essay a few days ago and this really stuck with me. Because it really feels like everyone is looking for this special thing to make younger people happier (more successful etc) but it’s kinda just 👇

Though foreign journalists flocked to the small Baltic nation to discover its secret, their findings were disappointing. As it turns out, it really helps under-thirties if their home country’s national GDP has more than quadrupled in their lifetime. It is also dandy if, in the year before they were interviewed, average gross earnings in the country increased by just over 12 per cent. Amazingly, rents sitting some way below the European average and university being free to most students also fosters youth contentment. Isn’t it all quite irksome? There’s no great Lithuanian recipe to steal. The way to bring optimism back for new generations is to, well, fix everything for everyone else.
