While book chapters are frequently a bear to write, it’s always thrilling to get a physical object at the end. Thanks to my coauthors Chris and Barbara! We got the intro to yeast chapters for this nice volume from MBAA.

Absolutely! It has a very drying taste, so it immediately dries your tongue and it has of course a moldy taste, also leather, hard to describe:) we also tasted a beer that had the cheese as the starter, it was very unique, not moldy in taste, and had a strong aroma.

2/2 Among 196 patients with S. cerevisiae, 30 had sterile-site infections. 23% were paediatric cases. Bloodstream infections were the most common source (23%)! All in all, #Saccharomyces #yeast infections are not negligible but have been studied too sporadically! Few retrospective studies so far.

Most of my at-home fermentation experiments are successful, this one is not :) It took me a looooot of time to get my hands on viable and pure Monascus from red yeast rice products. After inoculating to steamed rice, the Rhizopus-like and Aspergillus-like molds took over the slow-growing Monascus:

Low-level contamination confounds population genomic analysis and also phylogenomics in this example of #yeast #Saccharomyces. Very important: "Contamination rates differed however among sequencing centers: was high for 2 #Saccharomyces studies (2% or 15% of genomes)."

The new sourdoughs were identical but had various rare #yeast species from our sourdough collection added in triplicates. After continuous feeding, we will characterize the experimental sourdoughs for the microbiota and chemically as a follow-up project. Looking forward to see which one is best!

Real #cask ale or real ale from the UK is a wonderful beverage often described as a "live product", with live yeasts responsible from secondary fermentation and carbonation. I found only one scientific paper on cask ale pubmed.ncbi.nlm.nih.gov/36073539/ so I had to try isolating from it in London:)

With my recent trip to Rio de Janeiro, I managed to visit 26 Terrestiral Ecoregions of the 846 existing ones to do at least some nature photography and exploration. Still a lot to go! I also visited 9 Marine Ecoriegions (of 232) and 13 Freshwater Ecoregions (of 426).

Osmotic stress tolerance was chosen as a target to diminish virulence in the probiotic, a problem that affects immunocompromised patients and other vulnerable groups. Two genes were knocked out in all 6 backgrounds and only decreased virulence in mice in a collab w/ @renatokovacs1.bsky.social /2
