In that case, I suppose it's possible their "summary" infringes the third-party's copyrights, but that's likely going to depend on fairly sophisticated textual analysis and there's little incentive for those third parties to litigate that specific use.

I imagine they're probably based off general web-scraping third party references to the book (reviews, etc.) rather than the full text of the book. I doubt these scammers are spending any money/effort to try and ingest the actual work, so their text probably isn't infringing the book itself.

I doubt these are actually infringing though. The title of a work is generally not copyrightable nor protected under trademark law. Unless these "books" actually contain copyright-infringing elements of the underlying work (which I highly doubt), these aren't an IP infringement.

We can reasonably argue about the true utility of LLMs & economic sustainability of the business models, but it's absurd to pretend that there isn't rapid broad public adoption of LLMs (in addition to tech companies pushing it into every damn thing).
