Ok so a surprising & surprisingly large use for celery: Juice it, dry the juice into celery powder, & use it to make natural/organic cured meats. Celery juice has a lot of nitrate in it! So upscale cured meat makers can just use celery powder for nitrates, & sell it as "nitrate free."
