I'm not going to bake with it today, but obviously the starter loves whole wheat flour. I will likely keep an eye on it today and feed it before bed tonight. If I can get the starter to consistently bubble up like this, I can bake with it soon.

Okay, we got movement. Gave the starter it's normal 1:1:1 feed with all purpose flour. By mid afternoon, it had risen but was already starting to fall but the bubbles were tiny and it had only gone up just over the starting lvl. Added a spoon of whole wheat and this is where we're at this morning.

Mason jar of sourdough starter sitting on a kitchen scale. There is a green hair tie around the jar denoting the initial level of the mixture. The starter has risen at least double it's size and has lots of small bubbles within it.

Inside of the previous jar and you can see the starter with lots of bubbles of various sizes at the top.

No updates all week because she's been limping along after switching back to all purpose. It's been rising each day but not doubling. I'm not giving up, I just chalk it up to keeping the house a bit colder and giving time for the yeasts to mature.
