Just looked into it and it seems more likely that AIs use em dashes because a lot of older books were introduced into their training which have a much higher propensity for them. So, ignore my claims.

Reminder, though, that AIs are not intelligent nor do they actually know how to "talk". They're just really big statistical flow charts that can "guess the next most probable word" in a text, including conversational flows.

I also don't think that's 100% of why they sound like that, I think it's just one of the many reasons they sound like that. There's a lot of other biases mixed in to their output patterns that result in that somewhat unique style of writing.

By the way, I'm not an AI engineering or analyst or anything. "AIs are biased to talk like tech professionals" is me observing that the things people think are weird about how they talk match how a lot of people I've worked with talked pre-AI.

AIs are biased to talk like tech professionals (bros and otherwise) who themselves are more likely to use em dashes because they do a lot more technical writing.

The only time I use an ACTUAL em dash is when the software I use is automatically converting -- into one. Also an em dash is weird to use in fiction. I've only ever really used it in technical writing. I'm pretty sure its use in technical writing is why AI is biased for it.

Traditionally I use a lot of em dashes and was very sad when AI gave them a bad rap, but if someone texts you ACTUAL em dashes (—) that's like, the most AI thing you could do. I don't know anybody who would actually try to type that in a text instead of just two dashes as a substitute (--).
