Agaricus bisporus didn't *just* take america by storm because it was a cute, tidy little shape. The chalky white coloring (which is not how the species grew in the wild or was originally cultivated) satisfied 20th-century desires for food that seemed "pure" in a very classist and xenophobic way

This "fact" gets repeated a LOT (including by food writers) and while it's true that this species starts wee and round and gets into a cremini shape before really letting loose, bella style, the white buttons are a) a mutant colorway found by sheer luck and b) particularly button-y and uniform
