It's all a propaganda joke. R2D2 was flying the ship all the time, from the specialised port which exactly fit him. He was part of a sophisticated automatic gunnery system. "The Force" is the equivalent of the myth that WW2 night fighter pilots ate plates of carrots rather than using radar.
