A very enjoyable review, let's me know why I want to go there and what to expect when I do. Perhaps it's reserved for the app but I would've appreciated more pictures of the food. Handsome as you may be, a picture of you taking a picture wasn't as illuminating.

Very pleasant meal at River and Woods in Boulder. The Palisade Peach specials were quite delicious.
On a wooden table with diagonal slash marks running across it (I asked and no explanation was forthcoming regarding this design element), is a quasi rectangular plate with two deviled eggs. The egg on the right came out a bit smooshed and I am surprised they let that out of the kitchen. A picture of the special menu at River and Woods. It reads:

It took about four hours total which, OK, maybe I need to take the altitude into account more. FWIW, I would occasionally see the simmer get up to 195 degrees. Anyway, today it is the breakfast of champions and it tastes amazing. For sure not New Orleans style, but inspired.
A much reduced pot of beans that is nice and thick. The beans have finally plumped.On a black tabletop sits a bowl of redbeans with a dollop for ricotta from Five Freedoms Farms and literally torn pieces of chives. Some crushed red peppers and cracked black pepper are sprinkled atop while some freshly added apple cider vinegar rims the bowl, waiting to be stirred in.

Three hours in, I have transitioned from the timer to a stopwatch. All kinds of good smells and the beans look close. Perhaps I should have done some research on making beans at altitude before I started this, but nah. More fun to watch cheeky reviews of pressure cookers I won't buy... yet...

The other morning, I was allowed a few tentative pets on this beauty who is clearly well taken care of. Have I made a point of walking down that part of that street again around that time? Oh yes, very much so. Haven't seen the cat since. Typical!

And, now I wait... stirring every five minutes or so for the next hour and a half to two hours. I've never made this at altitude so I'm kinda winging it on timing. Just checked the temp (not something I've ever done when making red beans) and it is running at 188 degrees.
A blue Le Creuset Dutch oven sits on an electric stove. I probably should have cleaned the stove before taking the picture. A view into the Dutch over in which the ingredients are simmering. Of note, the Camellia kidney beans are very wrinkly.

Oh, we have plenty of those. They are just structurally disempowered. Stating this just for the record, for years, many have argued that the US courts must be reformed. But it's only just now moving from those far-sighted Americans' blogs and newsletters, to Jim Clyburn talking about it on the tv.

As @ryanlostintx.bsky.social used to (maybe still does, I checked his feed and didn't see it) say, time to get amongst it.
On the left of the frame, an electric range is seen with a dull blue Le Creuset Dutch oven on the front right burner of the hob. Then, on a fake wood countertop, from top left are arrayed two large yellow onions, a few blades of chives (these are gonna disappear but I always end up throwing away some chives at the end of the week so in they go), a bottle of Louisiana hot sauce (gotta grab some Crystal somewhere), a label from St. Killian's cheese shop reading 'parm 24m' (if I just had the rind there it wouldn't look like much), a bottle of Tamari, an eight inch chef's knife in a wooden, magnetized holster (the knife was manufactured in China out of Swedish steel. I'm not sure why that matters.), a head of garlic, a mostly empty bag of organic celery stalks, a wrinkly red pepper (with very limited exceptions, I neither cook nor eat green bell peppers), and a pepper mill (the ratchet thing works well enoug).  Continuing, rounding out the top row, is a large container of browning mushrooms (Jacques Pepin would go through these in, like five seconds) and a container of iodized table salt. One row down, there are (again, from left to right), a small bottle of Ortiz anchovies, jars of smoked paprika, cayenne pepper, HEB brand ground cumin, ground cinnamon, dried oregano, bay leaves and lastly a Kirkland sized container of garlic powder. (I keep this in the fridge as this container may outlive me.)

Finally, on a bamboo cutting board sits a package of Portuguese Linguica (there is not Andouille sausage readily available in the local markets), a package of crushed red pepper flakes (other than the occasional obscure vocabulary word, I can count on one hand the number of times I taught my mom something, which is, if you save those packets, you never need buy crushed red pepper. Finally, occupying the rest of the space left on the counter, are a bag of Camellia red kidney beans, a jar of Better Than Bouillon chicken stock base and a mostly empty tube of Mutti tomato paste.

Man, our previous pair of cats, we - without really thinking things through - put some scraps on their food. Just a harmless, special treat for the boys. Every rotisserie chicken thereafter (we're talking 15 years) was a two person job, one to pick the chicken and one to pick up the cats.

I mean, I got a lot of problems but making breakfast ain't one of them. Still, I don't think it was nice of them to make me cut out bacon and breakfast sausage.
Please see the other alt text first. This is a close up of one of the bagel halves so some of the details are more clearly seen. On a fake wooden countertop sits a plate with a blue floral pattern. On the plate are the lightly toasted and generously buttered halves of a day old everything bagel. Atop the the bagel are two scrambled eggs made with ricotta from Five Freedoms Dairy and various herbs and spices. For a little extra visual pizazz (and flavor!), the eggs are topped with coarsely chopped chives, cracked black pepper, a few flakes of Maldon salt, some of the seeds that fell of the bagels when I sliced them, a dusting of smoked paprika, a flurry of finely grated 24 month Parmigiano Reggiano, finished with a light splash of Louisiana hot sauce. (I miss Crystal!)

Little bits of all of the things just described are in the fore and background of the plate as I had no interest in cleaning the plate prior to enjoying the food.
