I can’t believe a Sid and Marty Krofft joint gave me nightmares (OR that someone lovingly put this dreck on Blu-ray?!). But there was an episode with a volcano and pools of lava and I was petrified for many months, circa kindergarten. The theme song said it: he’s a madman with an evil mind!

This cake has triumphed over pie in my family Thanksgiving for decades!

Screen 1, ingredients for pumpkin chocolate chip cake with orange icing

Cake:
1 tablespoon melted butter
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon cloves
1/4 teaspoon nutmeg
8 tablespoons (1 stick) unsalted butter, softened
1 1/4 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup pumpkin purée
3/4 cup milk
3/4 cup chocolate chips

Icing:
4 tablespoons unsalted butter, softened
1 tablespoon grated orange peel
2 cups sifted powdered sugar
2-3 tablespoons orange juice

Pumpkin chocolate chip cake instructions

1. Brush melted butter over inside of a 9x13” pan. Preheat oven to 350 degrees.
2. Sift together dry ingredients (flour through nutmeg). Beat softened butter with granulated sugar until light and creamy. Add eggs one at a time, and vanilla.
3. In separate bowl, combine pumpkin and milk. Add flour mixture and pumpkin mixture alternately to the butter mixture, starting and ending with the dry ingredients and mixing just to blend. Stir in chocolate chips. Bake in the prepared pan 30-40 minutes and cool on a rack.
4. For icing: combine butter, orange peel and powdered sugar. Add enough orange juice to make a spreadable consistency, beating with a wooden spoon until smooth. Spread over the top of the cooled cake.

I love Hopper (well, his art—he was reputed to be an a-hole), and this is one of my favorites. 💚 Here’s another. That morning light!

Edward Hopper’s painting “Early Sunday Morning.” A long two-story red brick building is shown from the street, in warm sunlight. The upper story shows multiple windows, apparently to apartments, with various curtains and shades at all different heights.
