A final historical british bake for #sourdoughseptember... This one is a maslin loaf made from around 50% rye, 30% hen gymro (a Welsh landrace wheat variety) & 20% strong wholemeal flour. All soured in my sourtrough, C17th style. This was delicious with set honey & marmalade.

My next bake for #sourdoughseptember is an 18th century style Derbyshire oatcake. Just fine oatmeal and water plus salt that's left to sour over a couple of days and cooked on the bakestone. I'm very happy with how they have turned out...pleasantly sour and nutty. Yum!

It used to be eels were the sort of food a king would serve at a feast. But they developed a lower-class rep., & by the 19th C. most eels imported to London went to street vendors. But they stayed popular: eels were the most purchased street food after coffee, tea, & dog meat. *

We can read these characters as embodiments of the 4 humors: the cowboy, calm and poised, is Phlem. The heavyset man, with his lurking rage, is Yellow Bile. The sad woman is Black Bile, & the sassy, sanguine fellow in the back is clearly Blood.

I've been making some extinct English breads for #sourdoughseptember This one is Gervase Markham's brown bread. I made it with 50% barley flour, the rest made up of rye, wheat & bean flour. Plus salt & water of course. It's the bread you made for your lowest servants. Twas heavy but not too bad!
