Lunchtime project. What goes in Ragu Bolognese? According to this (convenience) sample of 30 recipes by celebrity chefs, there's plenty of variation! Thanks, GPT-Astra. And apologies if anyone is actually from Bologna and feeling horrified.
Sankey diagram showing wine and milk/cream choices across 30 bolognese recipes. Ribbon widths represent numbers of recipes, not ingredient quantities. Ten recipes use red wine, nine white, three allow either red or white, one uses both, one uses rosé, and six use no wine. Milk or cream is required in 12 recipes, optional in one, and absent in 17. White-wine recipes more often require milk or cream: six of nine, compared with three of ten red-wine recipes. Seven red-wine recipes and five of the six wine-free recipes contain no milk or cream.Horizontal dot-and-line chart comparing wine added before cooking across 30 bolognese recipes, measured in millilitres per kilogram of main meat and ordered from highest to lowest. Among the 23 recipes with specified wine quantities, amounts range from Mary Berry’s 150 ml/kg to Marcella Hazan’s 695 ml/kg. Ina Garten follows at 652 ml/kg and Neil Perry at 625 ml/kg. Six recipes list no wine and appear at zero. Antonio Carluccio’s recipe specifies a glass without its volume, so it is labelled “Unspecified glass” rather than assigned a numerical value.Three horizontal dot-and-line charts summarise ingredient choices across 30 bolognese recipes, each using a scale from 0 to 30 recipes. For main meat, 11 use beef and pork, nine beef, three beef and veal, three a three-meat blend, two an alternative mix, one pork sausage and one chicken. For wine, ten use red, nine white, six list none, three allow either red or white, one uses both, and one rosé. Milk or cream is not listed in 17 recipes, required in 12 and optional in one. Main meat excludes cured pork and liver; milk/cream excludes cheese, butter and serving additions. The charts show recipe counts, not quantities or quality rankings.Horizontal dot-and-line chart showing how often eight ingredients are required in the sauces of 30 bolognese recipes, ordered from most to least common. Onion appears in 27 recipes, garlic in 24, carrot in 22, celery in 20, cured pork in 14, milk or cream in 12, and mushrooms and liver in two each. Onion is the most common ingredient shown; mushrooms and liver are the least common. Values count recipes, not ingredient quantities, and each recipe can contribute to several categories.

I feel like I'm noticing way more Moderator comments on @pubpeer.com . Am I tripping? I don't have an opinion about it yet, but I'm interested by it. Here's an example of a recent Moderator comment that appears in the middle of an author's comment, providing fact-checking. #researchintegrity
Screenshot from pubpeer. Comment written in bold and brackets reads: "Moderator: are you serious, Joshua A. Beckman? Do you realise that everybody in the world can read this and understand that you are capable of denying that there are exactly 12 blue and 11 red points visible in Fig. 3A. I counted them, too. Also, there is no reason in the world not to share the list of your 28 points."

Some folks confuse these things —who think the 'water movement' must be flawed, since bottled water is expensive, and contaminated water is poisonous. Clean water and #openaccess both cost $. We don't really need corporations selling packaged products, but communities funding reservoirs and taps.
On the left is a glass of clean water labelled ‘Delicious open access.’ In the middle is a plastic bottle of clean water labelled ‘Delicious open access, but stupidly costly.’ On the right is a plastic bottle full of putrid water labelled ‘Predatory open access.’

A tiny clay model of a goose sits upon a Logi brand webcam. It has a white body, black eyes, one bigger than the other, and an orange beak. The neck is cocked slightly to its right, as if to convey attitude, or perhaps a lively cheerful manner.
