All-in wheat and potato Sunday rolls (overnight proofing at room temperature, just 1g of yeast). Did not have the orange juice that the recipe was asking for and ended up using left-over dry sparkling wine (33g), which seems to have worked just fine.

340g kefir, 300g wheat flour 550, 240g wheat flour 1050, 100g sourdough discard, 30g butter/oil, 12g salt, 1g fresh yeast. Knead, overnight proof at room temperature, shape, leave at room temperature for 60-90 minutes, bake at 250°C (falling to 200) for fifty minutes. delish and keeps well :-)

A Swiss tradition on Easter Sunday: Zopf (braided bread). This one with yellow wheat, overnight cold proof, so all you need to do is heat the oven and bake it. (Pre/heated to my usual 250°C instead of 230, so crust is darker than intended). #breadsky

This is so, so well-articulated.
People call this friction "grunt work." Schwartz uses exactly that phrase, and he's right that LLMs can remove it. What he doesn't say, because he already has decades of hard-won intuition and doesn't need the grunt work anymore, is that for someone who doesn't yet have that intuition, the grunt work is the work. The boring parts and the important parts are tangled together in a way that you can't separate in advance. You don't know which afternoon of debugging was the one that taught you something fundamental about your data until three years later, when you're working on a completely different problem and the insight surfaces. Serendipity doesn't come from efficiency. It comes from spending time in the space where the problem lives, getting your hands dirty, making mistakes that nobody asked you to make and learning things nobody assigned you to learn.

Sustainable home baking. Been too productive and some of your bread has gone stale? Toast, grind and replace 5-10% (of flour) in your standard recipe with this (having soaked over night in some of the water, boiled). Improves aroma and crumb texture. #breadsky #sourdough
