Its been three days without my fresh milled sourdough: my fatigue, body aches, and sense of deeply disturbed ennui has returned. Bloating and constipation too. I’m glad I did this experiment. But it’s WILD that this alone has such an impact on my gut health. Holy fuck. What a gamechanger.

😂 I got impatient, ate a couple slices, and I’m pleased by how much better it is compared to my other loaves. It’s super delicioso! I’m definitely adding more vanilla sugar to the next loaf! Basically the bread need more hydration, kneading and misting, since fresh milled flour BE THIRSTY 💦💦💦

Update: Sour Obaasan is doing very well, at the ripe age of 8+ months. She loves consuming organic & freshly-milled wheat, and has begun producing tastier breads. I’ve since let her rest in the fridge while an offshoot of hers is being used on a day-to-day basis. Happy little yeasties right there~
