If there is a great example of a director elevating the material, it is surely "Basic Instinct" (1992). Eszterhas' script is amazingly stupid (usual for his work,) and yet somehow Verhoeven manages to turn it into a just slightly trashier Hitchcockian thing. Masterful.

Donkey Kong 64 makes extremely efficient usage of in-engine coloration to cut down on the number of textures. Entire vibrant and colorful areas are created at runtime from a single texture just by artfully tinting it.

The colorful cliffs in Jungle Japes are just a vertex coloration map being applied to a single 128x128 pixel texture.
