I'm thinking that the great mystery of "what kind of plant is this" can reasonably be assumed to be solved. I'm pretty certain that these are scotch bonnets. Looking forward to all the others still on the plant that are still ripening.

I've had this ferment going for 15 days now and I don't want to turn it into hot sauce yet but the brine tastes amazing and I kinda want to process it early just so I can drink the brine. Totally normal behavior imho

An in progress ferment in a mason jar waiting to be turned into hot sauce. The recipe is as follows: 158g chile de arbol, 19g garlic, 95g yellow onion, 423g water, 28g salt.
