25% Wholemeal, 75% strong bread flour, allspice, cucumber sandwiches. #food #cooking #baking #bread #yeast #flavoured #lunch #breadsky
Tin loaf with diagonal expansion scores in the top that did not expand very much.

450 g strong white bread flour
150 g wholemeal flour
390 g water (65% hydration)
12 g salt
7 g instant yeast
1 g ground allspice (pimento)

Mix all the ingredients and knead until it makes a somewhat elastic dough. The bran in the wholemeal means that it can never be as smooth as all white flour. Eight minutes kneading was enough for this.
Leave to rise in a very lightly oiled, covered bowl until doubled in size.
Tip out, knock back and shape into a log to fit a 9×5" tin. I line mine with baking parchment because the nonstick is disastrously shot, but if your tin is good that may not be required.
Leave to rise until almost doubled again.  
Bake in a preheated oven at 220°C / 425°F / gm7 for 45–50 minutes. Same loaf, sliced.Full on the cut end showing a tight dense and even crumb of light brown bread
Slices assembled into cucumber sandwiches, stacked, cut in half and turned to present the cut edges to the camera.

Lake aerator working #photography #environment
Aerator bubbling to the surface of a lake, rippling out in concentric circles of disturbed water. The lakes were dredged and partially drained last year to install the equipment which was made operational for the first time this summer.

I never bought him a pride onesie when he was a baby.

I never read him a book that had two moms as part of the storyline.

When he was little stores and businesses didn’t have LGBTQ+ displays and we didn’t celebrate pride month.

He was raised Catholic, and went to church.

Guess what? He is gay.

The rainbow won’t make your kids gay. They are born that way. A display in a store won’t make your kid trans, they are born that way.

If you don’t love and accept them for who they are, YOU are a shitty parent.

They haven’t failed, you have.

Looking south across the lake towards Hartslock Drive, four 12 storey grey concrete towers with Oakenholt House being the rightmost of them. Visible behind them, in fact 400 meters further distant on Yarnton Way six similar towers which, in true Father Ted style, are smaller. The rightmost, Maplin House, is which rather than  grey, being the first and at that point only block to have been refurbished.

Can't remember the last time I baked wholemeal sourdough. This was 50% wholemeal and 50% strong bread flour. A bit dense and little oven spring. #food #cooking #baking #bread #sourdough #wholemeal #wholewheat

A three liter  (4/5 of a US gallon) Kilner jar 95% full of active sourdough starter. A rubber band about a fifth of the way up from the bottom indicates the level at which it started.  The remainder is growth.

Just me saying that any effort to tackle misinformation must be an attack on Reform, thereby admitting that Reform are helping Russia to spread far right narratives and create dissent and unrest.
