I also love crusty cheese but something happened here where it had neither texture nor grit; it just sort of melded into the brioche. It wasn't bad, but I feel like the added cheese should have made a greater impact. My thought is that a lower temperature might at least keep it discretely outside.

I made a grilled cheese that also had cheese outside of it and it wasn't bad but it also wasn't great. I'm thinking next time I should lower the temperature a few clicks when adding the external cheese so it melts more than it crusts, but I'm not a doctor.
