Here. I’ll gladly share the random interwebs recipe I got when googled “chicken black beans rice” because that’s what I had to cook with tonight. 😁 I also added cumin. And it is DELICIOUS!
1 cup uncooked rice
1 cup chicken broth
1/2 cup salsa
2 tablespoons melted butter
1 15oz can black beans, drained and rinsed
2 chicken breasts
10 oz Enchilada sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 tablespoons taco seasoning
1 cup shredded cheddar cheese

Preheat oven to 350 F and spray a 9x13 baking dish

Add all ingredients except cheese and stir

Cover tightly with foil and bake for 55 minutes

Uncover, add cheese, and bake 15 more minutes

I found my Dad’s cuckoo clock in the garage. It was a gift from a German friend who came to stay about 20 years ago. It was SO ANNOYING we made him get rid of it… but he packed it up and kept it. Do I bring it back? Maybe it won’t be SO ANNOYING this time around and bring good memories?

I still love my little Panasonic Lumix. It has incredible zoom and wifi. I think I’m on the 3rd version of it - I upgrade every few years but haven’t for a while.

It’s so bittersweet. Laughing one moment, crying the next. Smiling overall. 🙃 I think. We had such a good life compared to most, I can’t complain. Letting go of stuff and things is cathartic, I think.

Spent morning cleaning out my Dad’s garage. Found lots of my grandparent’s things, too. Rats got into my grandma’s knitting, so that was easy to let go. My Dad’s tools & sports gear are going to be another story… It’s been 9 months he’s been gone. Still moving slow, feeling each moment.

I just put cinnamon in my coffee. And I’m trying to convince @seandhillon.bsky.social to do a Hallmark movie-themed fundraiser this year, mostly just so I can drink HC and snuggle in a blanket for an outdoor movie beside a Narnia lamp. With fake snow in the town square (aka Saanichton). 😀

Did some incredible girl-mathing today. I saved so much money at the mechanic, I bought new boots. They were on sale, so I also got cheese, wine, and baguette at the fancy shoppe. Then I bought the mechanics Timbits and went home with my fancy boots & cheese for a life I don’t have.

I ordered the Body Shop one cause everything in it I would actually use… then added bath bombs, shower steamers, makeup brushes, and chocolate. Then I got 24 goody bags of varying sizes and in going to mix&match all of the above based on who likes what. And then also maybe I get some too. ✨😇

I invite you to try 3 different cheeses - 1 soft/mild, 1 strong, 1 favourite, a handful of smoked almonds, a crisp apple or pear sliced thin, and another protein (deli meat or hard boiled egg) for stacking, on crackers of your choice. That’s my fancy go-to when I just don’t wanna. 😀
