While it rests you can make a pan-sauce with the brown bits still in the pan. - Deglaze with white wine - Cook wine until no longer smells of alcohol - Add chicken stock - Add cubes of butter coated in flour and swirl until thickened

I love my 10" cast iron skillet. It's probably one of my most prized possessions. Used it tonight to sear/bake a marinated chicken breast and it came out perfect (as usual). Thank you skillet.
