My family ate up aaaalllll the mini bagels yesterday so I made more! These are more like… medium bagels. Large bagel the size of a small bagel kinda bagels. Ube, salt, cinnamon sugar, and everything! 💜

Ube and salt bagels! Surprisingly the ube didn’t taste like ube at all despite the deep purple. I think next time I’ll use double, maybe triple the amount of ube flavoring.

It was gloriously cloudy this morning so I was inspired to bake!! Sourdough discard mini bagels and banana bread muffins!

Tray one of my sourdough discard mini bagels! 5 have everything bagel seasoning and 3 are plain. I wanted to leave some plain in case we hated the seasoning lol

Munchlax is the name of my sourdough starter. They were born August 18. The black line is a hair the to note where they started growing after discard and feeding (doing 1:1:1) the day before.

Munchlax is so bubbly!!! Smelling tangy. I can’t wait to bake with it 😭
