Did a second iteration for the Halloween colcannon, this time with regular potatoes. (The purple potatoes looked cool, but I prefer the taste of the Yukon gold or whatever.)

Learned recently that the Irish traditionally serve colcannon (mash potatoes and cabbage) for Halloween. Put my own spin on it using purple potatoes and carrots.

Mashed potatoes in Halloween colors, including carrots, shaped to look like pumpkins. There’s also a sour cream ghost.
