Potatoes being the symbol of defiance makes a lot of sense, from an agricultural perspective. Feudal lords favored grains, like wheat and rice, because they grew above ground, and they could see their tax. Potatoes grew underground, and if you didn't want to pay a tax, you just didn't dig them up.
