Soapbox: TexMex food is authentic. Texas was a part of Mexico and the influences in the cuisine are authentic. ALSO Authentic Mexican food is such a wide net! There is a ton of different variety going from like Quintana Roo to Sonora or Chihuahua! Mexico is BIG!

I also do it with carrot, parsnip, whatever really. Remove the lemon juice and use cauliflower and it's essentially a mashed potato substitute.

It's super simple to make! I throw in a bit of hot water and butter to a pot and steam the florets for longer than you'd normally steam broccoli. Throw it in a blender with garlic powder & lemon juice, salt to taste and use more butter/hot water to thin it out to your liking. Done!

Maybe ditch roux altogether next time and use sodium citrate to emulsify everything, then just use chopped bacon? Just a thought. I started using SC a while back and have never gone back. Makes excellent queso, too.
