Also redid my knife edge before work early tomorrow. Polished her, sharpened her, then the steak and onions were actually mainly to give her a new patina. Planned the food ahead of time specifically to do this at home on a day off.

Posting for @voxhallow.satan.social I did simple steak tonight. 24hr dry brine of salt and msg, then reverse-seared. Int temp of 130° in the oven, 3 min rest, then over to very hot lump charcoal grill to get some marks. Nothing fancy or high effort. Topped with lazy sauce. Messy, lone plating

I got up too fast from a nap while sick, blacked out mid-piss. Woke up 30 min later with my hand in the toilet. So I wash it and my hair is matted to my face. I had lifted up nose flesh from the toilet seat. I don't have insurance, so I poured in isopropyl and taped it back down. Still have the scar

Made a lil steaky-boi tonight, with a blackberry demi-glace. My friend did the pasta! Steak was taking a cheap cut and turning it into something beautiful, namely, some chuck sirloin. 3 day cure with orange blossom honey, thyme, marjoram, salt, and msg. Demi was fully from scratch, took all day

Made an elevated version of Cincinnati's chili over spaghetti because it's my friend's comfort food. Bison and wagyu, Irish whiskey, peaches, San Marzano tomatoes, espresso, and mint are the hallmarks of my chili. The pasta was boiled with herb de Provence and given imported Olive Oil
