Just for clarity: They aren't sending slop code to Godot The Program that then gets distributed everywhere; it's more like code suggestions to the repository where the maintainers can either accept or refuse these submissions. The built program is not affected by these, only the devs sanity.

I feel at least part of it is dynamics, there's little to no variation to the intensity or volume in AI voices. Also stuff like pausing for breaths or microstutters and all that, none of that feels natural ever.
