Day 1 of the sparkler themed #tasting. Gravity is clearly ahead yet everyone is different. That’s always a prominent aspect of Discovery Bar tastings. There are no wrong answers, only personal preferences. The Discovery Bar exists to help people hone or figure out what their preferences are.

10 years ago today I was building a community of #student #volunteers who were experiencing growing their own food for the first time, raising heritage #hops, saving #seeds, keeping #bees and #baking in our handbuilt earth oven.

A group students from a range of genders and ethnicities stood behind
a raised allotment bed. Compost has been freshly spread across the bed and spades are sticking out of it.

If you're wondering why I'm monitoring the temperature to check if fermentation is happening, it's because the sake brewing process means that sugars are being created at the same time as the yeast is converting them to alcohol. So it's not possible to use a hydrometer to check fermentation...

Spent yesterday at Dachau. It was emotionally brutalising. Half of it I was in tears, the other half numb. Deeply saddened beyond comprehension at humanity’s capacity for sadism and industrialised evil.

Replica gate at the entrance to Dachau concentration camp. The original was stolen and eventually found in a car park in Norway. It bears the sadist phrase ‘work will set you free’

The original trench, bank and fence between the concentration camp and the SS officers camp. The grass strip to the left was titled the neutral zone. If prisoners set foot there they were shot without warning. Officers often threw a prisoners cap in that space in order to justify shooting them ‘trying to escape’ while they retrieved it as it was an offence, punishable by torture, to lose one’s cap.

The Protestant church of remembrance where our tour ended and where we all lit a candle for those who lost their liberty and lives to on that evil, evil place.

Day 2 in #Munich. Living the Tram life and shuttling to and fro from the Viktualienmarkt. Bought a ton of Bavarian cheese and dried sausage and was gifted a pot of Obatzda a blend of 2 x 3rds aged soft cheese and 1 x 3rd butter, to be eaten with soft pretzels. Warmed Honigwein is so moreish 🍻🫶
