Ooh baby roux you know what that’s worth

Very dark very thick roux in a cast iron pan. The thickness is shown by a wooden spoon scraping a line down the middle like Moses parting the Red Sea and clearly it hasn’t flown to fill the hole back in. I’m very proud of this roux.
