This feels like a useless tradition. The library books all have NFC tags in them. You place a pile on the counter and all are scanned. All this does is cover a bit of the book

The time I tried to make koji from store bought koji rice and was worried I was going to get A. Flavus and therefore aflatoxins If you enjoy stressful fermentation this is the one for you I emailed Sandor Katz (see alt text) and he thought it was fine. I am still here

Enjoying the art of fermentation book and I am trying my hand at Miso. I bought some koji rice and used half for Miso, and decided to try and use some of the other half to make more koji.

I followed the brown rice with wood Ash method, and ground up some koji rice to sprinkle through 500g of the brown rice and wood Ash mix. Seemed to work, the rice smelled good and I got what looked like koji, although I didn't get deep green sporulation, rather light yellow and green (picture attached).

As I am rather inexperienced I have concerns. How do I know the difference between flavus and oryzae? Since they are so closely related I am wondering if they have the same fragrance? Obviously aflatoxin is my chief concern. This is also my biggest question regarding your method of using corn husks, how do you know which aspergillus species you're actually cultivating?

I then used my sporulated rice to make another white rice koji. Again it seemed to work and I had a nice white mold covering, and am in the process of making a chickpea Miso. Hoping I can compare the smells to see that it's similar.
