After at most 1 1/2 hours (reckoned from the moment the meat was placed in the boiling water), the rice soup with beef is done and you can eat it.

Once the rice is clean, leave the last water you added in the cup. Once the meat has begun boiling, pour off the water from the rice and add the rice to the boiling broth.

Put on the lid. Clean your rice ration (it amounts to four heaping tablespoons) by removing all bad grains; Pour the rice into your drinking cup, add cold water; Wash it by stirring it and then slowly pouring off the water; Wash repeatedly;

More from the 1887 Soldier's Cookbook: Field Expedient Soups for the Imperial German army. Part I: Thick soups (rice, groats, potatoes, legumes) www.culina-vetus.de/2026/10/14/i... #culinaryhistory #foodhistory #militaryhistory #wilhelminisch
Colour lithograph of two German soldiers in the pre-1909 blue uniform. The caption identifies them as engineers (Pionier-Battalion Nr. 9). The man on the left has his back turned to the viewer, displaying a field pack including a cooking kit attached to the backpack and a canteen worn on the belt. Both were standardised items holding 1/2 and 3 litres respectively and were used in field cooking.

Success (after failure). If you are dedicated to cooking with what is on hand, finding out that a branded gelling agent and a store brand one behave very differently is helpful. Dr Oetker Gelfix makes pâte de fruit. 1 sachet to 500ml seems to work well.

EVERY. TIME. It drives me bonkers. I see it in scholarship too: French or English sources are "literature", but Celtic-language texts are "folk tales" or "folklore", regardless of their origins or audience.

Preserved berries can also be used, e.g. blueberries, currants, strawberries, raspberries, cherries etc. Take a drinking cup full of water, 3 spoonfuls of preserved fruit, a little sugar, stir it, and enjoy.

Each then will receive 1/2 litre of coffee. If you want to drink more coffee, yo must make it thinner (Blümchenkaffee – flower coffee). In summer (heat), cook much thinner coffee because you want it to quench your thirst and carry some in your canteen;

After 1-2 minutes, stir the coffee with a clean spoon, then cover it firmly again and let it stand for another 3 minutes. When it has settled, drink it. — One cooking pot can be used to make coffee for 4-5 comrades as it will comfortably hold 8-10 drinking cups;

... Your coffee ration in peacetime is 15 grammes, which only makes one good brew of coffee (e.g. in the morning). The field service ration is 25 grammes, which brews a good coffee twice a day. — Grind the coffee very fine; Have patience with a bad coffee mill as there are many bad coffee mills.

I am back from a weekend of cooking a historically inspired feast on the theme of the eighteenth-century Grand Tour, and it was pretty great. www.culina-vetus.de/2026/10/04/a... #earlymodern #foodhistory
Cheese tartlets based on a recipe in Maria Sophia Schellhammer's wohl-unterwiesene Köchin. The tartlets are arranged on rectanglar white serving platters with a garnish of mache, candied pears, and pickled walnuts. Pumpkin soup based on a recipe in La Varenne's Cuisinier Francois. the photo shows a row of small pottery bowls filled with the soup, each one decorated with a single sage leaf. Roast beef. The beef slices are arranged on rectangular white serving platters, resting on slices of braised fennel and topped with marrow toast. Each platter also contains one small white cup of sauce royale. A course entirely based on Latini's Scalco Moderno: The same white serving platters now hold a serving of breaded, fried chicken pieces, pasta boiled in milk with parmeggiano, and a vegetable puree. They are accompanied by Latini's famous 'Spanish sauce' of cooked, reduced tomato.
Yes, that is chicken nuggets with mac'n'cheese and ketchup. It's an inside joke.

Grapenbraden is a Low German unicorn hunt, a beloved dish with no surviving recipe. Hafen braten means the same thing in High German, and there are a few texts. The rest is hope, and a decent onion sauce. www.culina-vetus.de/2026/09/30/f... #foodhistory #medievalsky
Grapen - a round, three-legged ceramic cooking pot with a long handle. Pots like these, made of ceramic or, more expensively, bronze, were widely used in North Germany. They were stood in the embers to produce a slow, constant heat.
