Choose 12 beers, drink them over Xmas, however you choose to. Most folk do one a day but there are other varients! Start/finish when you want, I normally start 20 Dec and go until NYE. Post picture/thoughts on here, use #12BeersOXmas and hopefully the community gets involved 👍🏼

I would usually go for cherry with ribs if I was using chunks, it's a nice, light and fruity wood and gives great colour. Any fruit wood is good but I've also used hickory, oak, post oak, mesquite etc. but smaller and/or fewer chunks if using stronger wood.

I'm using the pellet smoker because fuck hanging around outside lighting a fire in Storm Bert 😂 so it's whatever was already in the hopper Traeger signature blend (probably) and Jack Daniels, topped up with hickory because that's what I've got to hand.
