Huge prime rib for Christmas dinner🎄🤤 Dry brined overnight, injected with garlic, rosemary, & thyme infused wagyu tallow. Smoked for 4 hours with a rosemary, sage, & thyme 'bouquet garni' tossed in every hour. Finally seared to develop a nice crust before a long rest. Happy holidays everybody!!!
