my wife gets a bunch of freshly-minced garlic from work for free so we use a silicone mold to freeze it into cubes and its awesome for food prep. just put the mold through the dishwasher and the entire kitchen smells like garlic every time i open it and not in a good way

I finally cracked the code. the seriouseats recipe got me very far including an amazing fry nearly every time, but I always struggled with the sauce being too thin and breaking. my solution, just make a roux with the leftover dredging flour, dummy!
