In addition to fruit-juice sorbets, Iranian 'faloodeh' فالوده is made of thin starch noodles with chilled/semi-frozen syrup. Desert-powered Iron Age Iranian technology that allows the coldest of desserts in the hottest of deserts. Amazing! (📷: Ali Redmond)

From "The Mediterranean Dish" recipe by Mersedeh Prewer

"Faloodeh is a traditional and dearly loved Persian dessert made from frozen vermicelli rice noodles in a rose and lime syrup. Often called a “Persian granita,” this vegan, gluten-free dessert recipe has a satisfyingly crunchy texture and uniquely refreshing flavor. No specialty equipment needed! "

During the hot summers, the same pools become evaporative cooling tanks fed by the cold water of the qanats, carrying away heat from the surrounding area, keeping air inside the yakhchāl *much* colder than the air outside. Meanwhile, the stored ice can be used for frozen treats, refrigerating food.

Next to the yakchal, you build shade walls & ice pools fed from 'qanats' (underground aqueducts). These shallow pools fill with earth-chilled water during the day which can freeze at night in all seasons but summer. The shade wall slows the ice-loss so workers can recover it, filling the yakhchāl.

So you build a giant domed space (18 m high), partly dug into the ground, with 2 meter thick walls of adobe covered in a special water-proof plaster called 'sarooj', topped with an open chimney that lets heat escape. And you fill it with ice. But how?

They are, in a very real way, DESERT-POWERED. Low humidity means large temperature swings: although daytime temps can reach 70°C (158°F), for much of the year, nighttime temps rapidly plunge to near- or below-freezing. Low humidity also allows evaporative cooling to carry away lots of heat.

Same reason targeted marketing is effective. Women will read things targeted to men, because that is cross-identifying to a higher status. Everyone resists cross-identitying down. It’s the same reason for the “I’m not like other girls” phenomenon.

This paragraph by @dorianlynskey.bsky.social , the author of the review, is GOLD

The problem with the Al business is the same thing that drives enshittification. The improbable price-to-sales ratios of tech companies are based on the promise of future growth, hence high-stakes bets like the Metaverse or the failed social media platform Google+. The AI sector's colossal valuation derives largely from the salaries of the human workers it aims to replace - Morgan Stanley predicts it will add almost a trillion dollars a year to the S&P 500. And because the net worth of tech bosses is tied to stock value rather than actual profits, they have a personal incentive to keep investors excited: today AI may be a money pit, but just you wait. If the investor is the real target of the Al industry's marketing, then the consumer becomes simply a cog in the hype machine. Individuals using chatbots are not so much a crucial revenue stream as unwitting salespeople for the message that the machines will replace us any day now, as are journalists who cover such snake-oil absurdities as the AI-generated
"actor" Tilly Norwood.
