Made some birria. It turned out… just okay? Would have been better as barbacoa. But still! Dipping is always fun.

Three toasty golden corn tortillas in a glossy, black cast iron pan. They have been folded into half-moons. Crispy fried cheese and shreds of brown braised beef peek out the edges.

Three golden brown corn tortillas, folded in half, stuffed with braised beef and cheese and then fried, sit upon a white plate. Their surfaces are flecked with chopped white onion and bright green flecks of cilantro. Beside them sits a small white porcelain coffee cup. The cup is filled with dark, reddish-brown birria consommé. More white onion and cilantro lie on top of the broth. The plate of food looks good as hell.

Sorry, didn’t have my glasses on. You say she seems great. And you were able to opt out of transcription? If so, maybe give it a shot and see how you feel. It took me way too long and several therapists to find one who worked for me. There should be a better way. I hope it works out!
