Science isn’t always linear. More often than not, new discoveries make us re-evaluate what we once thought we knew for certain. The Twitter/X-famous #BlueSoup saga is a great example of this! Learn more here: youtu.be/6g-gNJcGsLY featuring @bielleogy.bsky.social @atinygreencell.bsky.social

So new gelling agents have been introduced over the years, such as guar gum and xanthan gum, which have much higher melting points (220 and 270 degrees Celsius). 7/8 🧵
table of melting points for various gelling agents, including agar, gelatin, and guar gum.
gelatin melting point 37 deg C
agar melting point is 85 deg C
xanthan gum melting point is 270 deg C
guar gum melting point is 220 deg C

Fanny, whose husband was a microbiologist, suggested using agar instead of gelatin for culturing bacteria. She knew of agar and its superior heat tolerance from its use in east Asian cooking, such as Japanese and Indonesian desserts. 3/7 🧵

To study bacteria, scientists need to grow them, which can require a solid medium. In 1881 microbiologist Robert Koch first tried gelatin, but it didn’t work well: it was easily digested by some bacteria and melted at the temperatures needed for experiments (37 degrees C) 2/7 🧵

You may have heard of agar, made by some red algae- it’s a vegan substitute for gelatin, a food additive for thickening, and popular in many east Asian desserts. But it’s also a staple in microbiology labs everywhere, thanks to Fanny Hesse… Let me tell you a story! 1/7 🧵
