Ready for the oven, but they’ll be resting in the fridge for an hour first. The stuffing is rice bran oil, lemon juice, cooking wine, light soy sauce, sesame oil, tamarind, garlic, ginger, galangal, lemongrass, red onion, all cooked together, plus coriander leaves.
The same fish as before, but facing to the right. It’s lying in a baking dish on a layer of parchment. Its sides have been slit in three X shapes, and the stuffing as described is spilling out of every orifice. So to speak.

Meet my new friend. Further imagery will be posted as the evening progresses.
A chunky fish with pink-toned nose and fins lies, facing to the left, on top of a crumpled white plastic bag, which in turn is on top of damp newspaper. It’s a snapper! The fish is dead.

It’s a partly cloudy day. We’re looking at a modernist office building, three storeys high. It’s mostly grey concrete, with alternating vertical concrete and glass panels. The centre section has pale yellow panels with rectangular geometric designs. On the street side is the logo of the City of Canterbury-Bankstown. On the left are the trees of Lofts Garden, and there’s another tree on the right. But most importantly, all the electricity wires in front of the building have been fitted with black and yellow warning covers.

That is wonderful to hear! Your restraint is highly commendable, and sticking to just one Balming Tiger track will give your podcast that perfect, focused burst of alternative K-pop energy without overwhelming the playlist.

Diversifying the other three tracks outside of East Asia is a great choice too—it will give your episode a fantastic, well-rounded global sound.

Whenever you're ready, I'd love to hear which tracks made the final cut! What is the vibe of the episode?

Sat plan: Ease into the day; minor household chores and administrivia; listen to and choose some music; record an episode of “Another Untitled Music Podcast” with @snarkyplatypus.com (previous episodes at anotheruntitledmusicpodcast.com); evening TBA.
Against a blurry background image of an audio mixing desk sits, at a jaunty angle, the square cover image for a podcast, looking a bit like an album cover. The text reads: Another Untitled Music Podcast with Stilgherrian and Snarky Platypus.

Found in the archives, a photo of me in 1995 at the office of Big Hand Asia Pacific, an ill-fated Dotcom startup. My long curly hair is tied back in a ponytail, although you can’t see that —thank the gods.
A white man in his 30s wears a red and white check flannel shirt, open at the front, to reveal a black and white t-shirt, and blue jeans. He wears spectacles. He leans casually on an office divider as he looks into the camera. In the background are office cubicles with the usual clutter of a production studio of that era. One desk we can see a Mac of some sort. The lighting is shockingly bad, presumably from a flash.

And as if the deliciousness and speed wasn’t enough, I also get to tell people “it’s Taiwanese”. Sounds far more exotic than “chicken in soy sauce” and makes me seem much more worldly than I really am. 😂

The secondary dish was stir-fried vegetables with a little oyster sauce and light soy and whiter pepper. Snake beans, red onion, red capsicum, and a big bunch of morning glory aka water spinach. And served with steamed rice of course.
A wok over a gas burner containing the vegetables as described. Bright green, bright red, scrumptious.

Here is the barramundi I cooked tonight, more or less a Malay ikan bakar grilled slowly on banana leaves. The sauce is based on sambal and balchan (shrimp paste) with lemongrass, ginger, galangal, lime juice, shallots, a little coconut milk. I stuffed it with coriander leaves and more sauce.
On a wooden chopping board are charred banana leaves, and on top of them is a grilled barramundi fish covered with a light brown sauce. More sauce oozes from cuts in the fish.

Louis de Bernieres: Men are expendable. They don’t have the automatic respect they once had

When his partner left with their young children, Louis de Bernières – best known as the author of Captain Corelli’s Mandarin – was plunged into a painful two-year legal battle. Appalled by ingrained prejudices that favoured mothers, he insists the courts stripped fathers of their rights – leaving him nursing a bottle of red and deep resentment.
