Interesting to note that the DC Comics line released between 1984 and 1986 had Kirk take command of the Excelsior after the events of Search for Spock. They then had to contrive a way for the crew to become renegades and Spock to lose his memory again, to fit in with the start of Voyage Home.

It was costed and paid for out of the Next Generation budget, and they didn't want the hassle of storing it and moving it to a sounstage that was already tight on space. A useful infographic here showing how big these sets were.
