So delicious looking I wish more of my family liked lamb. We fly into a town in Oregon that has a butcher that sells rack of lamb. Maybe I can play on my wife's sympathy to stop before we drive home. The problem is the 16 hour time difference probably means I wouldn't want to cook anytime soon. 🤷‍♂️

Two plates of food with knives and forks. Panfried lamb cutlets with dijon mustard, rosemary and garlic. Baby potatoes boiled with rosemary and mint. Tomatoes with salt and fresh thai basil. Salad of grated raw carrot with peanuts and chopped silverskin anchovies. My lovely wife grated the carrots for me and I did the rest. That's teamwork. When we had lunch at Michelin-starred Hambleton Hall we had carrot and anchovy canapés (see other photo) and we felt that the balance was wrong because we couldn't taste any anchovy. Obviously balance is key with something as strongly flavoured as anchovy. So I tried to adapt raw carrot and peanut salad, which we both love, by adding a few finely chopped anchovies. It was perfectly balanced for me (who likes anchovies) but my lovely wife (who doesn't like anchovies) felt it had too much anchovy. So next time I'll add less anchovy. Hambleton Hall fine dining. The top canapés are apple and the bottom ones are carrot and anchovy in a tiny edible basket. Couldn't taste any anchovy, sadly, but it motivated me to try the flavour combo of carrots and anchovy at home. A combo I'd never encountered before, despite many years of us being restaurant inspectors for a food guide.

I’m actually having a great time, despite having heart failure on the 3rd day here. Before that we saw Akihabara, Shibyua & a shrine in Tokyo, & evening in Kanazawa. I've been in the hospital since. But it has been good for my soul & art. I'll get out Thursday have 3 days to see things with Lisa.

Yesterday I had an anxiety dream about my childhood home, that affected me more than I thought. Wound up writing a darker poem than I usually plan for, below. But another night of processing I feel great this morning. Banging out some positive poems and art. Again looking forward to Thursday release

Yes we have 3 days & 1/2 in Tokyo. Also spending 3 days in LA with family before heading back to Oregon. I used to laugh in the 80s when Americans would say "oh look at the Japanese they work too much". Then you compared vacation hours, & of course Americans worked far more for less money too.

Thanks for your concern 🙏💙. Yes I have several. Here's one I wrote 3-4 days after getting out of the ICU. Yesterday I was maudlin because I’d had an unsettling dream about living in my childhood house. It affected me more than I thought, until I went to write that poem, then I felt the effects 😬

😂😂. OMG they are so polite. Also only a few seem burned out, unlike everyone in the US. Lisa immediately noticed how different it is here than the hospitals in the States. The funny thing is she & the Japanese doctor share stories about patient foibles & have a laugh. Mostly my foibles 😉
